Vegetable Tofu Soup

A blend of unique flavors… lemon grass with the goodness of tofu.

Serves: 4

Ingredients

  • Salt to taste
  • A few coriander sprigs
  • 5 lemon leaves
  • 3 cups vegetable stock
  • Ginger (peeled and crushed)
  • 2 tomatoes (chopped)
  • 2 tsp chopped spring onions (chopped)
  • 1/4 tsp  green chillies
  • 1/2 tsp lemon juice
  • 1 stalk lemon grass,
  • 1 tsp soy sauce
  • 1 tbsp coriander (chopped)
  • 1 cup mushrooms (sliced)
  • 1 cup tofu (cubed)

Method

  • Boil the vegetable stalk.
  • Mix mushrooms, paneer, lemon grass, ginger, lime leaves and green chillies and stir well.
  • Boil the vegetable stalk on a low flame.
  • Combine salt, spring onions, cilantro and soya sauce.
  • Remove the pan from the flame.
  • Add lemon juice.
  • Garnish with coriander.
