Tandoori Masala

Aromatic tandoori Indian masala for anything that is tandoori.

Serves: 4

Ingredients

  • 1 tablespoon paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cayenne pepper or chilli powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 cup red wine vinegar
  • 2 tablespoons vegetable oil
  • 2 teaspoons ground cumin
  • 4 large cloves garlic (chopped)
  • 4 large cloves garlic (chopped)

Method

  • Heat oil in a pan, add garlic and sauté till golden brown.
  • Mix cinnamon, cardamom, coriander, cumin, and turmeric and sauté till the masala is aromatic.
  • Switch off the flame.
  • Add the garlic and spices in a blender.
  • Add paprika, cayenne, oil, salt, ginger and vinegar and grind to a fine paste.
  • Store the masala in a dry container.
