- Milk- ½ Cup
- Roasted poppy seeds (Optional)
- Raisins (Optional)
- For the Outer Covering
- Rice Flour- 1 Cup
- Water- 1 Cup
- Ghee- 1 tsp
- Salt- ½ tsp
Method of Preparation
- Mix all the three ingredients of filling well, that are jiggery (or sugar), milk and coconut.
- Cook the prepared mixture of filling over medium flame. The mixture will be slightly watery in the beginning, and then soon, it will begin to thicken up. Stir the mixture continuously while cooking it, till it turns brown in colour.
- Then add raisins, poppy seeds, pistachios and cashews, and cook for another one minute.
- Next, add cardamom powder to it.
- Keep the mixture aside to cool down.
- Boil water in a vessel, and add flour, salt and ghee to it. Stir the mixture quickly in order to avoid lumps.
- Lid the vessel for some time and allow it to cook.
- After some time remove the lid and stir the mixture continuously.
- Then, turn off the burner. Transfer all the mixture from the vessel on a flat plate.
- Knead the mixture to make soft dough. Dough should neither be too dry nor too sticky.
- Grease your palms with oil and make balls out of the dough.
- Flatten the dough and give it a cup shape.
- Stuff the prepared coconut filling into the cup shaped dough.
- Dip index finger and thumb in the oil and make small pinches (5-6 in number) side by side on the outer edges of cup. Form a peak by bringing all pinches together, giving it a look of whole garlic.
- Grease bamboo steamer or steaming rack, and arrange all modaks on it.
- Steam them for 15-20 minutes.
- Serve hot modak with ghee on top.
