Labra, a scrumptious dish from West Bengal… Contains a selection of vegetables which is cooked over a low flame along with mild spices. Labra is a popular dish among the bong house-holds which is served with rice. This dish also made during the Pooja feast with an aromatic Panch phoran tadka.


Cooking Time: 30 Mins

Serves            : 4


  • Salt to taste
  • 6 Green chillies
  • 5 gms Panch phoran (see tips)
  • 200 gms of Sweet potatoes
  • 200 gms Raddish
  • 200 gms Egg plant
  • 200 gms Cauliflower stem
  • 200 gms Cabbage
  • 1 tsp Turmeric powder
  • 1 tsp Sugar
  • 1 tsp Ginger (paste )
  • 1 cup Mustard oil
  • 200 gms Red pumpkin


  • Wash the vegetables and chop them.
  • Heat oil, combine Panch phoran and dried red chillies.
  • Saute them until they turn golden brown.
  • Combine the vegetables.
  • Cook the vegetables over a low flame.
  • Add sugar, salt and green chillies.
  • Cook the vegetables for another 5 minutes.
  • Serve hot with rice.

My tip

Panch phoran is a Bengali tadka which is used to season Bengali dishes. The five common spices used are

  • Cumin seeds
  • Nigella seeds
  • Fenugreek seeds
  • Mustard seeds
