Amiri Khaman

A delicious lip smacking tea time snack originated from Gujarat.

Serves: 8

Ingredients

  • 25 g of ginger
  • 450 g split bengal gram (chana dal)
  • 5 green chillies
  • ½ tsp turmeric powder
  • 1 tsp soda bi-carbonate
  • 2 tsp rai( mustard seeds)
  • ½ tsp turmeric powder
  • ¼ tsp hing
  • 4 tsp oil
  • 20 garlic cloves (chopped)
  • 3 tbsp sugar (powdered)
  • 2 lemons (juice)
  • Salt to taste

For Garnishing

  • 2 tbsp dhania (chopped)
  • 2 tbsp coconut (grated)
  • 2 cups sev

Method

  • Soak dal in luke warm water for 6 hours.
  • Keep aside 4 tbsp of chana dal and pound the remaining dal with ginger and green chillies.
  • Mix the unground dal.
  • Combine with salt, turmeric powder and soda bi-carbonate to the ungrounded dal.
  • Keep this batter aside for 4 hours.
  • In a greased thali lay out a little mixture and steam it to make dhoklas.
  • Repeat the same for the rest of the mixture.
  • Cool the mixture and crumble it.
  • Mix sugar, salt and lemon juice to the mixture.
  • In a pan heat oil and add mustard seeds in it.
  • After the seeds splutter add garlic, hing and sauté it.
  • Pour out this tadka over the crumbled dhoklas.
  • Garnish with grated coconut, sev and chopped coriander.
  • Serve with chutney.
